The prefou and the mogettes, they are much more than recipes. Chapter 1: The prefou, audacious seducer

Préfou, a staple of Vendée cuisine, makes your taste buds swoon from the first bite. It's easy to understand why the mogette cracks (and crunches!) for it. This bread garnished with garlic and butter, in its original version, hides its game well. Its crispy crust reveals a filling with delicious aromas, whether it's garlic, chorizo, goat's cheese, dried tomatoes, sardines, or even mogettes.

The origin of the préfou comes from a baker's trick : to test the oven temperature before baking bread (at a time when thermostats did not exist), the baker would place a small ball of bread dough in the wood-fired oven. Once baked, this meant that the oven was ready for use.

In order not to throw away this “edible thermometer”, the bread was garnished with garlic and butter before being eaten as a snack in the bakery. Today, this little culinary ritual has become an essential aperitif. We want more with every bite!

Chapter 2: The Mogette, gentle and patient

The mogette, this small white bean, is much more than a legume in the Vendée cuisine : it is the beating heart of local tradition. Each seed, cultivated in our lands, carries within it the history of a region attached to its roots. It is found in many dishes, but it is with Vendée ham that it reveals all its splendor. The secret of its cooking lies in patience: the more it simmers, the more it offers an inimitable texture.
